Blueberry Orange Buttermilk Muffins




These are just good ole muffins, not too heavy or sweet. Light citrus flavor with the orange, and nice plump blueberries! I used frozen, and they turned out well.
Enjoy!

Ingredients:
2 1/2 cups All Purpose Flour
3/4 sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg, slightly beaten
Juice of one orange
1 cup buttermilk
2/3 cup canola oil
1 tsp vanilla
2 cups blueberries

1. Preheat oven to 375, and grease one dozen muffin cups.

2. Combine dry ingredients, add blueberries. Set aside.

3. In a separate large bowl, combine wet ingredients. 1 cup at a time, add in dry ingredients until mixed. Don't overmix to avoid heavy muffins!

4. Spoon muffin mix into cups until 2/3 full, and bake for 20-25 minutes. or until inserted toothpick comes out clean.

Sweet Potato Biscuits




Merry Christmas!

It's been over a month since I've posted anything (oopsies!). It's been a busy month with graduating and holiday happenings, but I was able to make this yummy biscuits for Christmas lunch. They are light and fluffy, and have the slightest taste of sweet potatoes.

I used good ole Paula Deen's recipe for this, which you can find here but I used 1 cup of sweet potatoes instead of the 3/4 cup, and slathered on the melted butter before baking them, and added a rounded teaspoon of cinnamon.

These don't need butter added on, because they are moist and rich already.
